  • Made butternut soup 4 years using whole squash - neck is where most of squash is. Why peel? Split squash lengthwise, remove seeds & place, skin side up, on bottom part of oiled broiler pan. 375 degree oven roast 45 min or til veg is collapsed and soft. Let cool, scoop out flesh. Add apple 2 soup! - 11/1/12
