Super scrumptious, spicy muffins! I got this off of Allrecipes.com, but omitted a few things, and added a few things to make it lower fat & calories, based on one of the reviewers who said they used less sugar and replaced the oil with applesauce.

Pancakes are tricky because you don't want the outside to brown too fast before the inside gets cooked. My favorite technique is to jack the skillet temperature high to 7 or 8 so it can heat up fast, then lower it to 3 or 4 when it's time to spoon the batter on. They cook slower but more evenly this way.
Orange rind and dried cranberries flavor a cake-style muffin that's easy to make and freezes well. Microwave at HIGH for 20 to 30 seconds to thaw. When fresh cranberries are available, use them to add a pleasant tartness.
Bake these over the weekend, and enjoy throughout the week for breakfast or a snack.
