This is an adult mashed potatoes. I fed it to the kids along with fresh green beans and some pork chops. My husband and I enjoyed it, but the kids weren't thrilled. Oh, well. I would have put another cheese, cream cheese, in it, but I didn't have any. It was still yummy.Submitted by RUMBAMEL

I thought this sounded good from another Sparker so I made my own with more asparagus, no olive oil and changed the onions to red onions. Maybe next time some slivered almonds would be nice. Hmmmmm..... Submitted by RUMBAMEL
We had extra peppers from the garden that were really small and a few potatoes so my husband desided I should make this. I then got a few one more pepper from the guy up the street and viola...Yum! We make this with Turkey Spam or canned ham and vary the veggies. It's quite easy and much healthier than the restaurants. We eat it with Success boil in the bag brown rice which cooks in your microwave in 10 minutes. 1 c cooked rice is 150 cal, 1 fat, 33 carbs, 2 fiber and 4 protein.Submitted by RUMBAMEL
I got the basic recipe from Dierberg's and used my own approximations based on the order of ingredients. My friends and family love it! This version makes 4 cups or 8 servings of 1/2 cup each. You can eat it warm also and it tastes like a loaded baked potato!Submitted by RUMBAMEL
