When I was eight years old, my parents got American Girl dolls for me. Along with the doll, I also got the Felicity cookbook and this recipe soon became one of my favorites. For those of you with a gluten allergy, you can substitute the regular flour with rice flour.

These are absolutely delicious and very kid-friendly. You could easily leave out the chocolate chips to shave off some calories or try it with all applesauce instead of the oil. You can also mix in extra nutritional boosts like ground flax seeds, wheat germ, or finely shredded carrots.

A delicious breakfast treat; splenda keeps the calories down. Serving size is 1 muffin. Main ingredients are pumpkin and whole wheat flour. Nuts and raisins could substitute for the chocolate chips. At 184 calories per muffin, these are a delicious treat. My son is especially fond of these, with a glass of milk, for breakfast.Submitted by GMAELLE
