My family has made this recipe for many, many years, but always with too much meat and sauce (which is really just mushroom soup). To lighten it up, I replaced most of the soup with fat free sour cream and fresh mushrooms, and cut the kielbasa in half. To add fiber, I used small potatoes and kept the skin on. Please note that the sodium is high. This is from the sauerkraut. If you rinse and drain the sauerkraut in cold water before cooking, much of the salt is removed. This recipe is easy to make in the slow cooker. Put it on low before work, and come home to yummy Polish food!Submitted by JENELOPE
Here is a lovely vinaigrette that I have come across during my travels in France and perfected myself. It's definitely tangy and fresh. If you love garlic this vinaigrette is perfect. Serve it with a simple baguette and a bit of cheese, pour on your salads, or dress your meat with it.Submitted by SWEETMOYA

This recipe is adapted from Recipezaar. I call this easy chili colorado because the way I was used to it as a child was my mom or grandmother making the sauce from fresh dried chiles. I added more than the 4 tsp of chili powder. I used about 8 tsp. Typically, I would pair this with some Mexican rice and refried beans, but this time I made mashed poatoes as the side and breaded okra.
