The pine nuts really complement the lemon flavor, but if you decide to leave them out, you can deduct about 30 calories and 3 grams of fat per serving. I also used Wegmans Vegetable Stock which is lower in sodium than most regular vegetable stocks.

Okay, I confess that these taste nothing like fish sticks, but they taste delicious with tartar sauce or cocktail sauce(which was the point for me!). They are really just a healthier, low-carb version of a breaded tofu stick, which would taste great with just about any dipping sauce! This recipe is a combination of two similar recipes that I had in my cookbooks, with some modifications to made them healthier and tastier!Submitted by LYWHITE
