These muffins are loaded with whole grains, fruits, and vegetables! This is a slightly different version of my Healthy Breakfast Muffins. This recipe made 32 regular sized muffins. This soup is great for eating more veggies...I'm usually not too excited about eating these vegetables but this soup tastes so good! Even better it's very inexpensive for such a filling meal! Submitted by JOANNALEE3
From cooks.com adapted with olive oil and country crock instead of butter. Could use less of each or just one. I cook in cast iron and tend to need a little more. Juice of one lemon for less tangy flavor, two as written here.Submitted by LENOREMORR

I won't lie this recipe is involved, but it is worth every bit of the effort! My best friend and I came up with this and our families request it once a week.
And the leftovers (when there are any!) are just as good!
You can adjust the spice to suit your taste by adding or removing jalapenos and purchasing spicy green enchilada sauce or mild.
I've also tried everything I can think of to reduce the sodium in this recipe but this is about it. If you have any ideas I'd love to hear them!
