A delicious and healthy creamy fall soup. My family loves this. We have it the night before Thanksgiving every year. This is the lightened version from the original recipe which also includes heavy cream.
Use an organic chicken, season it, roast it, strip off and separate meat from bones & fat. Discard skin & fat. Boil bones in water. Season with salt & pepper, Strain the bones and discard. Add veggies to broth. Cook until veggies are done.
