These are a healthy version of good old fashioned pancakes.
Submitted by PROVL8DYThis is a soup my son Quinn loves -- it has ham, potatoes, lentils, and a leek. I toss in whatever veggies I have on hand to vary it a bit, but essentially, this is the soup. My husband and I eat it as is, but the kids like it after it's been blended up.

Salmon is used in this recipe but any fish fillet may be substituted for the salmon. You can also jazz it up with additional spices such as thyme, dill, and oregano. I serve this with a baked-crusty bread.
You can substitute any fish fillet for the catfish, such as cod, mahi-mahi, grouper, tilapia, etc.

This is a wonderful fruit medley soup which is really good served either as a meal on a hot summer day or as a starter course served with my Cajun Caressed Tilapia with Cantaloupe Salsa.
Serve with steamed vegetables for a complete meal.
