This is the Quaker Vanishing Oatmeal Raisin Cookie recipe but with cranberries instead.
Zucchini Banana Quinoa Flaxseed Muffins
Makes 24 mini muffins
(recipe adapted from Everyday Food Magazine )
Flour, whole grain, 3 cup
Egg, fresh, 1 medium
*Fresh Chopped Zuchinni, 2 cup
Baking Powder, 2 tsp
*Dole Pineapple Tidbits 100% Pineapple juice, 1 cup
Raisins, .5 cup, packed
Butter, salted, .5 cup
Butter, unsalted, .5 cup
Granulated Sugar, 2 cup
Walnuts, 1 cup, chopped
if you like fruit then you will like this. this was the first thing that my grandmother taught me how to make it only takes about 5 min. to make.
Super easy but high in sugar. Possibly use sugar substitute for half of sugar to cut back.
For those who are working with keto but can't do artificial sweeteners of any kind!
