Extra quick and easy "Irish Soda Bread". The original recipe came from Cooks.com but I reworked it to make it more diet friendly.
I used a mixture of orange flavored dried cranberries (Craisins) and Golden Raisins that I plump before adding to the flour mixture.
Don't be shy about adding your favorite fruit (my fav is blueberries and bananas) or to spice these up in your own way (my mom loves nutmeg)...but anyway you cook it, this will be your favorite pancake recipe!
