This is super easy, REALLY yummy, and very versatile. I use it on steamed broccoli and other vegetables, on popcorn, and pretty much whatever else pops into my head. It's delicious.
Use this Tuna mix with whole wheat crackers, celery, whole wheat bread. My favorite is Whole Wheat Ritz Crackers.
This is a modified version of a recipe that David Lore used to bring to our Quaker potlucks (before our meeting-place went vegetarian). It is a quick, good-tasting dish which makes a great dinner when paired with a spinach salad.
I bring this salad to work quite often. It's easy to throw together or put each ingredient in to-go containers, to assemble later.
Put the cooked chicken in food processor and pulse til finely chopped
Grate the zucchini and onion into the chicken mixture, and add the Kamut bread crumbs (soft) which are torn into small pieces.
Combine the chicken broth with the mayo and add to chicken mix. Add the parmesan cheese, salt, sun dried tomatoes (cut into small pieces).
Roll the 15 oblong shaped croquettes in the dried bread crumbs
Bake at 200 celsius for 20-25 minutes, on a baking sheet with parchement paper, til croquettes are brown on bottom.

I made this up one day craving something new to eat for lunch, and it's really good! It's very filling. Go sparingly on the soy sauce and rinse the beans in cold water to cut the sodium.
its jsut a mix of everything that taste really good to put on bread or taco or whatever you want. Clen up the nose and the belly real good too.
