A great and filling dish that is high in protein, low in fat, super easy and quick to prepare and reheats beautifully. My husband's favorite when I serve its with my "Jenn's Chicken Fried Rice" for an at home, healthy Chinese meal.
Can be used as a side dish or throw some protein and possibly some noodles/rice in and you have a full meal!

Bean Threads-Cooked
Cucumber-Thinly sliced
Bunch of Celery-Thinly sliced
One sprig of Summer savory
One sprig of Dill weed
Celery salt to taste
Seasoned rice vinegar
Saifun Bean Threads (Comes in three pack trays)
Put one bundle of bean threads in a medium size bowl. Pour boiling water over bean
threads, let sit for twenty minutes.
Toss the veggies and herbs with vinegar, add salt. Let these sit and marinate while the
bean threads are softening.
Pour off water on bean threads, sprinkle with rice vinegar, toss together with veggies.
Serve cold
This is a flexible recipe as you can substitute other veggies you already have instead of running to the store.
