Tuscan-inspired, protein-rich, good for using up leftovers from last night's dinner. Feel free to add whatever other veggies you like to spice it up even more! EDIT: Apologies to any one who read the "whole wheat flour" in the cooking instructions; I merely copied the directions from the aforementioned site and did not edit the instructions to list that you should use the King Arthur Gluten Free Flour. I assure you, when using this particular ingredient, this recipe is gluten free. Again, my apologies.
My great-grandmother's recipe. She used home-made crust but in this case it was made with premade, refrigerated Pillsbury crusts to save time. I do have the recipe for the fresh crust if someone wants it, but pretty much any flaky pie crust recipe will do.Submitted by ADOS-ADOS
