Submitted by METAGODDESSThere are a lot of steps to this flavourful, vegan pasta dish, but you can do a lot of the prep ahead of time. The onion / garlic puree can be easily made up to a week ahead, and the chickpeas will keep their crunch for a day or two if kept in a container like a cookie tin - NOT a plastic bag! The toast takes only minutes (though it bust be served immediately), and can be done at the same time as the chickpeas by adding the bread tray to the oven when there are 15 minutes of roasting time left.

I have played around with this and I think it's really, really good. I have no idea why the one rater gave it such a mediocre review, because I really think this is amazingly good for such a quick and healthy recipe. Maybe they didn't realize it was not going to be exactly the same as something made with white flour? Make this instead of having an Atkins bar or going on a chocolate binge, I promise it will sate your deep dark cravings! Careful, it's addictive so you may want to split it with someone you love! I thought this might make a good birthday "cake" for a low carber - if plated prettily and topped with the optional ganache, a squirt of whipped cream and some shaved LC chocolate, it would be really celebratory and won't send you into a blood sugar coma.

This is the cake I made for my grandmother's birthday party, altered from a cupcake recipe by Nicole from Baking Bites (http://bakingbites.com/2007/06/vanilla-bu
ttermilk-cupcakes/). Deliciously moist and very vanilla-y, a perfect all-purpose cake for all! The lack of salt in this recipe allows the sweetness of the lower sugar content and the rich butter shine through.
This is a modified version of a recipe for Double Layer Chocolate Pie from Jello.com, which uses less pudding and utilizes the extra Cool Whip as a topping.
