My version of yummy pumpkin pie oatmeal! This makes either 4 large servings or 6 smaller ones. I like to make this larger amount and divide it into containers for work. I just microwave it, and sometimes pour a little skim milk over! If divided into 6 servings, calories are about 160.
I keep trying to find new ways to eat my oatmeal, and get more fruits this one is really good.
Needed something to make my oatmeal just a little more interesting! It's low in Sodium which is something i'm always looking for.
These are moist, dense muffins that are NOT sugar or fat free...but are still on the healthy side of things.
I baked them to take on a camping trip & they were not only delicious first thing in the morning, but a nice pick-me-up during a hike~!
My 3 & 5yr olds love them too...a big + ;-)
Note to self: mini chocolate chips would be a good addition!
