This is a variation of the Spark Recipes Oatmeal Cottage Cheese Pancakes but it does not use egg whites and it uses banana instead of stevia. I have a large family so the smaller recipe does not work for me.
Omelette is mixed up in a baggie and dropped in boiling water. No butter, oil or extra fat is added.

This is a great, easy basic pancake and waffle mix recipe. I have replaced the oil with flaxseed meal for more fiber. Very light and fluffy.
Based on a recipe from a superb low carb cook, I've "Texanized" the original. Have it plain OR garnish with your choice of salsa, sour cream (or Greek yogurt), chopped pickled/fresh jalapeƱos, chopped tomatoes, sliced/chopped avocados. The almond flour is really optional, but included in the nutritional statistics. The ricotta cheese blends in so well, you won't know it's there -- but adds some wonderful protein to the stats.
The semi soft version of the farmer's cheese works wonders for this recipes and can be easily find in all grocery stores. For this recipe you will need an 8inch/20cm non stick skillet or omelet pan. You can serve them warm or at room temperature. If you want them warm, keep the over preheated at less then 200F.
