I changed this recipe from Dr. Shepherd's Low FODMAP book. I did not have tapioca flour so I subs. with cassava flour and no cornstarch so used potatoe starch. I also wanted less sugar so instead of 1 cup of brown sugar. I used a quarter of each brown sugar and coconut sugar. I wanted more than 2 small carrots so I opted for 1 cup of shredded carrots. I don't use veg oil anymore so Avocado, EVOO or any other will do. Every thing else is the same with the recipe. The muffins took more time than 12-16 mins so I left in for about 30 to 45 but checked with skewer every 15 minutes. They came out perfect looking, delicious with butter. A very fast breakfast with some milk of choice.

Very delicious muffin for being healthy and I used about 1tbsp for the cheese spread on each muffin. I did not have cream cheese so I combined mascapone and creme franche 4 oz each. Wait until muffins are completely cooled for hours and than you can frost and freeze for indivdual treats when you want a pick me up. I leave four in refrig. for the week to have on hand for a fast bkft with my coffee or just as an after dinner dessert with fruit. If you are watching cholestrol like me I substitued the 4 eggs in the orginal recipe for 1 egg/ 1egg white / 1 flax egg and 1/4 to 1/2cup of applesauce. Enjoy your vit E and A with this mffin.

These turned out so much better than just using one GF flour mix. They taste just like a scone , I was so pleased to come up with the recipes so I could feel normal again. Enjoy! Just a note!::The last 4 ingred.s are for the sugar glaze, so do that last.

With diabetes I needed to find a tasty granola that was full of flavor but would give me around 15 grams of carbos. So I had to tweet a few recipes to get this one. You could add vanilla extract which i may do next time. This makes a lot of granola and if you wanted more you could have it since it is low in carbos. I freeze most of this and leave out about 5 servings for snack and bkft. Enjoy.!

This is a very yummy weekend delight to have. It is different from anything I have made regarding Gluten free . It was very tasty and filling for one large pancake .I topped with Ricotta quarter of cup to give some protein. When pancakes just come off the pan rub with butter on both sides , top ricotta or any cheese you like , cinnamon,nutmeg sprinkle, berry compote and than sprinkle with the powdered sugar . This was the best weekend bkft and healthy Gluten free!

Got a good rating on Recipezaar. I am always looking for the best bran muffin recipe. I left the raisins out of this one though. I will try as is first, then try switching out half the oil or more with applesauce. Switching all would substantially reduce the calories.

This is a modified recipe of my earlier post Bran Muffins. I substituted 1/2 cup applesauce and 1 TBSP olive oil because I didn't have canola oil anyway. I also reduced cooking time to 16 minutes. They turned out GREAT. REally, best bran muffin recipe I have yet tried.

I like to use a healthy mix and then add more nutritional value with applesauce and flax (sometimes I add wheat germ also). The chocolate chips iare not a bad tade off to make this recipe VERY kid friendly- my 3 boys love them !!!
