A great and protein rich supper. I use dried pinto beans and soak them, the recipe actually calls for a 14 oz can, but I use a cup of dried beans. It also calls for a 1/2 jalepeno, but I dont miss it, I guess if you want, you can add it in. Recipe is from La Dolce Vegan by Sarah Kramer. I love this book. A very filling and indulgent French toast. One slice will definitely fill you up. There are many opportunities to substitute low-fat things here (use buttery spread instead of butter, or use lower fat milk and sour cream, or 3 whole eggs + 3 egg whites, etc...)Submitted by COOKANDRUN
I use all purpose gluten free flour and 6 small organic farm fresh eggs - I would add more of all the veggies next time.
Great cold too. The flour settles to make a fake "crust" and thicken.
