Combine flour, baking soda, baking powder and salt in one bowl.
Combine bananas, egg, erythritol, and vanilla in another bowl. Mix well and then add applesauce.
Add dry ingredients to wet ingredients, mix, and divide into 14 muffin cups.
Bake for 15-20 minutes at 350 degrees, or until a toothpick comes out clean.
I got the idea for this from a magazine, but didn't have most of what went in it on hand, so I overhauled the idea and flavored it with what I had around! The result is a super healthy and filling lunch pie with four giant servings, perfect for an afternoon coffee session with the girls! :)Submitted by DARWYNNE
