This is a big family favorite! Use fat free cheese to really bring the fat down. I was tempted to use corn tortillas, but they're not quite the same.
This is a MUCH lower calorie, lower fat version of a recipe that sounded good to me.
Adapted (simplified and defatted) from the Punk Rock Chickpea Gravy in Vegan With A Vengeance, by Isa Chandra Moskowitz.
A zesty tomato based chowder with wonderful flavors and textures with chorizo sausage, shrimp and/or fish. Makes 10 servings of 8.7 oz (247 grams) each.
My take on pizza crust - yummy - freezes well as well - This is enough to make 2 large (16 piece) pizzas (more if making a really thin crust) I divide in half after its risen and wrap 1/2 in plastic wrap and freeze for a later time. To use later - thaw in fridge, and roll out.
Once you get the hang of it, it's easy to whip up stir-fries using any combination of your favorite vegatables. Substitute lean beef or chicken for the pork, or switch seasonings -- the combinations are endless
