This is an exceptional recipe if you're looking for high protein, low fat. This and sauerkraut for your carb makes an awesome mini-meal or snack. Or for a bigger meal you could put it on a whole-wheat bun for your carb and sauerkraut for your veg.
My husband ate something similar on a trip to Munich. He searched the internet until he found a recipe that sounded like what he ate. After a few tries and a few alterations, this is what we came up with. Not a low fat meal, but hearty and satifying. Served with mashed potatoes it is a real winner. A hearty and tasty soup

Please use heaping 1/3 cup of coconut flour instead of shredded coconut. Please use 1/2 cup fine almond flour. You can use farmers cheese or small curd cottage cheese instead of ricotta. Also add 1-2 tbs Psyllium husk or xantam gum ( optional) Also use erythrol (swerve) instead of xylitol. And add 1 tsp baking powder. Mix all and bake on 350 for 50-60 min or until inserted toothpick comes out clean. Leave in warm oven for 15 -20 min before taking out . Cool at least 30 min before serving .
