A meal in a bowl! This is a great lunch or supper on hot days, and it fills you right up for less than 300 calories. For suppers on the go, you can freeze the chicken strips in advance and just heat them up in the microwave. Low in sodium, high in protein.

Brown chopped onions and diced garlic in olive oil. Add meat and cook until brown. Add pre-cooked brown rice and mix with spices, tomatoes, and pre-cooked corn stripped off the cob. Load mixture into bell pepper halves and bake at 375 for 30 minutes.
These are good with honey or jam or put berries and whipped cream over them. If you make them less sweet (cut sugar by half), they're good as a biscuit dipped in soups or stews.
