Butter mochi is chewy and gelatinous, but sweet and onolicious! This recipe is not exactly low-cal, but it is good for a crowd. If you leave it on the table at home, you will snack on it all day...so make it for skinny friends and treat yourself to a sample. DO NOT refrigerate...it will get hard.

I got this recipe from Nourshing Flourshing! They are fast easy and all good ingredients, can you believe only 3, yes 3 ingredients in these cookies? There really doughy and soft, so make sure you let them sit to harden a bit!Submitted by SHELBSYD
I got the idea for this recipe from Elana Amsterdam's book, The Gluten-Free Almond Flour Cookbook. I replaced the agave with xylitol to reduce the carb and sugar load, and reduced overall sweetness a bit. My 12yo son still says this is the best chocolate chip recipe I make, and it contains a lot more protein and fiber than "regular" chocolate chip cookies.Submitted by SCRIPSI
