I revised recipe from the back of a Saltine cracker box. I used turkey sausage and gluten-free pasta. It almost comes out like a pasta e fagoli! Enjoy
I once clipped this recipe from a magazine, but over the years have made it my own! You can create your own, lower-calorie version with low fat cottage cheese.
Got this recipe from an issue of Cooking Light, and modified it to be much healthier!
Start your next meal with a vegetarian version of carpaccio: paper-thin slices of young zucchini lightly drizzled with olive oil and topped off with creamy feta cheese.
I like knowing that whole ingredients go into my food. I'm tired of buying the premade meatballs, so I came up with this recipe. These are very flavorful (cut back on the italian seasoning if you don't like a lot of flavor!), and I like to make a HUGE batch and freeze them for an easy meal another night.
Just winged it tonight and came up with this KILLER lasagna recipe. My kids and I loved it! I like making the rolls, because it's easier to determine a single serving. Also, these freeze well for an easy meal another night. I'm sure some of the ingredients could be tweaked to further lower the calorie count and up the nutritional value. One obvious addition could be spinach, and an obvious calorie/fat cutter could be low-fat cheese products. But, don't skimp on the seasonings! Enjoy!
I don't have a name for this, but it's a dish I've been making for years
Finally, a lasagna recipe that is low in calories and fat! I took out alot of the cheese and grease, making it meal that I can enjoy guilt free. Works well for the picky eaters in my family and fits into the budget. Pair it up with a fresh steamed vegetable or salad and you have a perfect meal!
Trying to get more veggies in my diet so I add them to everything. The Ravioli will be mini's so 2 Ravioli per wrapper = 8 Ravioli per serving! (You'll get to eat 4x more than if you took the mix and put it )
This is a perfect winter dinner. It's great for vegetarians (with 19+ grams of protein and 40% of your RDI of calcium), but omnivores will love it too! You can also make it on the weekend and pack five portions for your weekly lunch. Easy as (lasagna) pie!
This recipe has more steps than ingredients, but many of them can be completed at the same time, or while you do other things (like go on SparkPeople!). Relax! Both polenta and pepperonata are eaten all over Italy, with regional variations, so don't be afraid to mix up this recipe yourself! If you're not vegan, definitely consider topping it with parmesan!
This is a quick and easy dinner that requires minimal hands-on time. Italian-inspired vegetables are roasted, then tossed with pasta and balsamic vinegar (no fatty cream sauces here!). If your local grocery store or Italian market has fresh whole-wheat pasta, give it a try in this recipe!
This recipe is adapted from the Fat-Free Vegan Kitchen.
This is an even-easier, even-lighter adaptation of a popular recipe for lighter eggplant parmesan.
When you've tired of whole-wheat pasta with tomato sauce, give this unusual combination of cauliflower, walnuts and feta a try!
Double the sauce and freeze the extras for next time. Can also be served over rice or noodles or even a baked potato.
I don't remember where I got this recipe but it is one of our favorites.
