This is a variation on SP member SUEAKE's Spaghetti Squash Lasagna. It uses turkey instead of beef and fat free cheese and cottage cheese.
The base recipe has only 5 ingredients. However, I add in/leave out vegetables as needed. I have added in grated carrots, chopped zucchinni, fresh mushrooms, black olives. Use your imagination. My family still raves over this one!! Makes a thick and hearty sauce.

Do you love spinach artichoke dip? I sure do. I don’t make it that often and when I realized I wanted it today, I thought it’d be interesting to make it into a main dish or entree. Enter pasta and we have a fantastic combination. This pasta dish tastes just like the dip. It’s hearty, creamy, and filling. It’s very rich so I would recommend having it paired with something else – salad would be great. I ate a small portion of it and was stuffed. Enjoy!
Chicken breast marinated in Italian dressing, then cooked with stewed tomatoes.
Uses diced portabella mushrooms instead of ground meat. Not quite vegan but is vegetarian.
This is traditionally made with ham, whole milk mozzarella, and basil, but I this variation saves considerably on fat and calories, while still satisfying my craving for cheese. It's also a great way to use up leftover chicken.
