Baked Potato Flake "Fried" Chicken Thighs

I use skinless, can be with or without the bone. Can use for other chicken pieces. Choose your options for seasoning from anything that doesn't had calories or salt. 100 grams = about 3.5 oz.

Low Sugar Zucchini Banana Bread

Instead of white sugar this recipe uses molasses, which adds iron. Contains a lot of healthy ingredients and no eggs, as one of my daughters was allergic as a baby. I formulated this for the babies at first, but I'm addicted to it! All my friends love these muffins.

Samosa Pie

Eggchef had mentioned a craving for samosas a while back, and I figured, why not a big one, instead of the bite-sized? So, here’s what emerged: all the flavour of samosas including the healthiness of the vegetables and the spices of the curry, wrapped in a delectable, flaky pastry crust. You will need a 10 inch spring-form pan for this recipe, which is fully vegan and a lot lower in fat than the deep-fried bites, and as a bonus it only gets better as it sits! Actually, it’s best made a day ahead and then reheated at 350F for 40-45 minutes.

Really basic and better for you than mac n cheese from a box. Makes 12 big servings. I like to add in whatever veggies I have on hand. They tend to pick them out but at least I tried!
