Great for those who can't have soy or dairy! If you don't have cravings for sweets, then you can probably decrease or omit the brown sugar. Low cost and you can eat the whole pan of muffins without breaking your diet!
Submitted by GYROPILOT28676I adapted this recipe from a South Beach diet version. In cutting the recipe in half, I forgot to half the almonds. I really liked the very nutty taste, but you can use half my amount to keep the proportions the same. The South Beach recipe also contains Parmesan cheese (2Tb) which I left out due to a problem with dairy.

Submitted by SHRINK71I do not use potatoes in my cholent - the classic recipe omits the carrots & uses potatoes instead. I prefer it this way AND it is much healthier!
