spicy cajun style rice
I made it with beef and chicken because I had a small pkg of each left in the freezer but it can be made with just beef, chicken or pork. Maybe with seafood or salmon. I'll give that a try sometime.
Save your left over red beans, and put them in a quick stove top chili. Serve over some rice or with some cornbread.
This is a great dish for these cold winter nights. Serve with cornbread and hnoey butter for a real treat.

The only thing "poor" about this stew is the cut of meat because you make it with inexpensive ground beef. My family loves this stick-to-your-ribs comfort food! I love the fact that it is a one skillet (and a little bowl) meal.
