This is a dish you can use many ways!!! Eat it like a burrito, in place of taco meat on your tacos, as a dip for tortilla chips, or our favorite way is to put just a little in a soft flour taco with a little salsa and low fat sour cream. yummm... however you eat it, it is wonderful! Growing up in Texas I always loved enchiladas. When I moved away I found that the enchiladas were different. Some places even put tomato sauce over them :-|. This gravy recipe is taken from one by Robb Walsh and only slightly altered to try to remove some of the oil. I hope you enjoy as much as we do.Submitted by ANJNNO
Perhaps it’s the lime dressing, which infuses the dish with flavor without overwhelming it in goo. It could be the quinoa, which has a distinctive nutty taste far superior to white rice and its lamer brethren. Or, maybe it’s the tomatoes, black beans, and scallions, which reminded one friend of "the insides of a really good burrito."
Whatever it is, it’ll make you forget uninspired diet food. :-)
Seriously EASY and tasty flour tortillas. Take the time to prepare them, be patient with the food and with yourself, and you'll have really awesome wraps for a sandwich :) Having a cast iron tortilla pan works nicely, as does the ability to roll sticky dough into the thickness of a traditional crepe.Submitted by YOUNGPADOWAN
This is a veggie/vegan burrito. The original recipe called for using a whole pound of vegan cheese, but i cut that in half. if you use more than 1/4 cup of cheese on each burrito, then you will need to adjust for the calories. With using the whole pound of cheese, each burrito would be about 601 calories.Submitted by SANDRAMONROE
