Every Brazilian cook has his or her own way to make Brazilian Feijoada. Every time it's a little different based on what's on hand. Years ago it was made by African slaves with whatever happened to come their way from the master's handouts. This is a very simplified version including only the meats my family likes. That way no one gets a pig's foot on their plate accidentally! It's best served over hot white rice, orange wedges on the side, fine sliced kale sauteed in butter with a little minced garlic, chopped tomatoes and onions with a splash of vinegar and lemon and a dash of salt, and if you can get it toasted mandioca meal (farinha).Submitted by GIRLINBRAZIL
This is makes 6 HUGE sandwiches. I have a hard time eating half of one. This is a lower carb recipe, with close to 1:1 ratio of protein to carb.
Note that there is typically a LOT of dipping sauce left over, hence you could approximate much less of the sodium content listed in the recipe.
brown and drain your ground beef
dice the tomatoes and onions
shred the cheddar cheese
cut up the lettuce
lay parchment paper on a cookie sheet, spray with olive oil spray.
overlap the cheese on one edge to make a long piece of cheese, melt until it turns slightly brown.
Lay parchment paper over a big rolling pin and use a spatchula to transfer the cheese to the rolling pin. Lay across length wise until cooled.
Assemble your taco and eat.
