Cook the bell pepper, garlic and onion until it's soft ~ about 10 minutes (If you want, puree the cooked bell pepper mixture to use as a thickener)
In a slow cooker, over lowest setting, add cooked pepper mixture then stir all ingredients together and let cook about 2 hours. Cool completely, and refrigerate overnight to blend flavors before using. Store in fridge!
To fix the too vinegary taste – I added 6 baby carrots, a small can V8 juice plus water, a packet of travel flax, and some xanthan gum and then cooked it for another hour or so on the lowest setting.

This is my grandma's original homemade Pico de Gallo recipe! This is a real family favorite at my house. It's super-fast and easy to make and the result is absolutely delicious!

This meal is a dieter's nightmare. I only make this when requested. Still delicious, so I'll share how to make this. Because I make it as an entertainment dish, the measurements are large, but can be pared down for a simple family meal. You may substitute Light versions of the dairy products to make it a bit healthier without sacrificing taste- I've not tried Far Free versions.Submitted by SHINAKO
I used to have seven or eight layers to this dip when I first started making it, but not everyone likes salsa and guacamole. So, it's now down to six, but still delicious. It's best made with Rosarita refried beans, but I can't seem to find them many places. This makes 9 servings and I put it in a 9 x 13 x 2 casserole dish.Submitted by RUMBAMEL
These are a soft cookie that stay soft even after several days. since they are made with butter though, it is recomended that you refrigerate them unless you are going to eat them within one week of baking. I first got the recipe from a Suzanne Somers site and have altered it a bit. My 3 year old ate almost 6 oz all my himself tonight. This is great as a side dish with meatloaf! I would cut the serving sizes down, though. I calculated it for 4 dinner size portions and we eat it with a salad or small piece of meat like grilled chicken. But you could make six servings and eat it with meat loaf. The nutrition would then be 169.1 cal, 9.2 fat, 9.4 carbs, and 12.5 protein. Yum, either way!Submitted by RUMBAMEL
