A friend gave me this recipe, and the original is delicious. However, it's also got 2 tbsp of oil and 1 tbsp of butter. So I eliminated the butter and substituted the 2 tbsp of oil for 1 tbsp of extra virgin olive oil. I also doubled the carrots and onions.

I was looking for a new veggie side dish for dinner one night and saw Paula making this on TV. I entered her original recipe and it didn't seem too bad. I decided to modify the recipe to see if I could lower the calories and fat and still keep the taste...it worked! You could also add a couple garlic cloves and some fresh basil before serving to make it more of an Italian tasting side dish.

This no-guilt recipe makes a moist, sweet bread that goes well with many different ideas, and is quick and easy to make. And the best part - barely any fat!


SERVING IDEAS:

1. You may also add in 1 Cup of chopped nuts, chocolate chips, dried fruit, etc. to the mixture for added taste and texture.

2. When made in the 8x8" pan, it opens up so many possibilities! I use a cookie cutter to cut out tiny cake shapes.

For a light, more breakfast-y option, you can ice them with light yogurt, flavored or non.

For more of a dessert/snack cake, ice with frosting or glaze and decorate as desired.
To be extra fancy with the snack cakes, you can cut each horizontally in half. Put a thick layer of icing on the cut sides of each cake then stack the top halves back on to them, and THEN ice the whole thing. They look adorable!

My personal favorite is to serve the bread warm, with ice cream!
