Works okay with regular brown rice, but brown Basmati's slender grains offer an inviting combination of elegance and earthy chew. Now add some chunks of zuchinni, lots of your favorite fresh herbs, and the melowness of coriander and cumin, and you have a salad that's practically a meal.
In fact, I often make this as a vegetarian entre option. You can add chopped, toasted pecans or walnuts.... or chickpeas.... or sauted mushrooms to "beef" it up a little more.
Delicious, Hearty Pasta with Bashamel Sauce - Not your diet choice, but a half serving on a Holiday weekend, will bring a big smile to your face :). You can compare this to a Lasagna, or other baked pasta dishes. Great for parties and holiday events!Submitted by SHERITOFF
This risotto was a afternoon inspiration based on too much Food Network and a desire for something different to go with mediterranean pork skewers. The savory of the rice, onions, peppers and mushrooms is beautifully offset by the surprising sweet of the raisins. I polled our guests, since it was an experiment, and was encouraged to make it again.Submitted by SOLANDRA1
