I know the sodium is high, and that's mostly due to the soup. If you can find a way to substitute, have at it! Just remember that shiratakis don't soak up excess liquid like pasta does, so your sauce needs to be thick to begin with. I generally keep my sodium pretty low throughout the day, so one dish with a lot of salt every once in a while is worth it to me.
