Always keep these ingredients on hand, and you'll always be prepared for any guests that may surprise you.
This can be made with leftover turkey or chicken as well as canned. This is great over croissants, but will go over almost anything.
Spray glass baking dish with non stick spray.
Season chicken with taco seasoning, place in baking dish.
Pour Salsa on top of chicken.
Bake 30-40 min
Boil rice and cook corn according to instructions
Add rice to plate, top with corn and lastly add chicken breast with salsa, add a tbsp of sourcream
