Slow Cooker Vegan Elvis Oatmeal

If Elvis had been a vegan, this is how he would have started the day. This is a play on his favorite sandwich--a grilled peanut butter, banana and bacon sandwich. Itís creamy, sweet, peanutty, and has a touch of smokiness and salt.

Marinara prima vera
Marinara prima vera

Sort of a cross between a straight marinara and a prima vera sauce, this recipe skips the wine from the prima vera.

Note there is some overlap to prep and cooking, so the prep time may be somewhat shorter than you might need, depending upon how you cook this sauce (see the Cooking Instructions for more info).

Chipotle Black Bean Soup

The instructions on the cooking of the beans has varying times. Deb's were done in 2 hours 45 minutes, mine were done in more like 4 hours. The original recipe called for 6 hours. I suggest checking yours after 3 hours, but plan for more cooking time if necessary.
