This came from my love of green enchiladas and soup. I figured there had to be a way to combine them! Make it a meal: Add one cup cooked rice (brown, maybe) or a cup or corn. Its good topped with cheese and tortilla chips, but none of these options are included in the nutritional information
This is a favorite soup of mine. I make it every week all winter long. You can make it on the stovetop as the directions state, or you can throw all the ingredients into the crock-pot on low for 6-8 hours.
I always rinse all the beans, to reduce the sodium.
Add a little less water, and make it a chili. Try topping it with cheese or tortilla chips (for extra calories). When I bring this to pot-lucks, I always get asked for the recipe.
This is my grandmother's chili recipe, edited to be healthier. I usually eat it with saltines and maybe a little cheese on top. I don't measure out my servings, but I can get about 12 small bowls of chili per batch. This chili is one of my favorite things about winter!

The addition of the sweet pickle relish is a little weird, but this is a good chili for putting on things - scrambled eggs, hot dogs, spaghetti.
The longer this recipe cooks, the better it tastes.
If you would like absolutely no 'sugar' then substitute the milk with heavy cream...but watch out...that will amount double your fat grams from 9.6 to 16.8
Use broth or water, meat or none, more veggies or whatever you like, top with croutons, crackers, Parmesan cheese or not. This is a basic recipe to use. I will describe pressure cooking but you can cook longer if you don't have a pressure cooker or use a slow cooker. 1 cup is a hearty soup or 2 cups is a meal.
This soup is infinitely flexible. Change veggies. Change seasonings. In fact, I didn't list seasonings in the recipe although I used bouquet garni and dill for mine. I may use a chili seasoning next time. Eat it for breakfast, lunch, or dinner - it's full of protein and fiber but not fat!

Delicious! I usually put this through the food mill to puree it. If you are going to use a food processor use the white parts of the leeks and the lightest green parts to stay away from the most fibrous areas that do not puree well. I use red potatoes for their flavor but you can also use white potatoes. You can use low fat chicken stock in place of the homemade stock.
This uses mostly home canned or frozen vegetables. Easy to through in the crockpot

Very Filling and I find no Desire to snack after this!!!!! More Broth needs to be added if reheated the next day! Crisp crumbled bacon can be added but I recommend using the bacon as a garnish because in goes all rubbery when it is cooked into the soup.
