Thanksgiving Recipes (Most Popular)
Inspired by the numerous awesome pumpkin recipes on here. I saw similar recipes for pumpkin muffins but not for bars, which was what I wanted.
Delicious with a dollop of whipped cream. Stays a little softer on the inside thanks to all the pumpkin. :)
Feel free to substitute splenda for the real sugar, egg beaters for the eggs, etc. I used what I had.
Also: I prefer a nice amount of spice in my bars, but reduce the cinnamon and pumpkin pie spice if you don't!
Sweet potatoes are a Thanksgiving staple, but I can't tolerate another year of mushy, sticky, marshmallow covered grease. Those vitamin A delivering darlings deserve better than that! So last year, I converted a family favorite into friendlier fare. And it's vegan to boot. (No, the meat-itarians didn't notice either). How about them apples!?Submitted by BRRRANDI78

This is a yummy mix of grains I discovered on my quest to get away from processed foods. These grains all have different cooking times, but soaking them overnight fixes that problem. They will all steam up in about 20 minutes, the same as white rice. They cook at a 1part grains to 2 parts liquid ratio. I get all these whole grains from the bulk food section of the heath food store and mix them up in a big container for storage, then cook up portions as needed.Submitted by WILDFIREWENCH
If you love pumpkin pie, you'll love this. It's basically hearty pumpkin pie, without a crust. There is more pumpkin in this dish than in most pumpkin pies, so you get plenty of Vitamin A with this tasty, low-calorie dessert.]
(I wasn't sure what to call this - but it turns out to be somewhat pudding-like. It's really great reheated!)
