Stuffed and Baked Pumpkin
Stuffed and Baked Pumpkin

This is an awesome recipe, which I modified but did not invent. Credit goes to Helene Samuel from France via Dorie Greenspan. You can change this recipe in lots of fun ways, including substituting rice for bread or adding hearty greens, etc. This is similar to the classic version, but the pepper has been removed.

Low-carb Leftover Hamburger
Low-carb Leftover Hamburger "Stuffing"

You know the second day after you make hamburgers, the ones that are left over, nobody wants to eat? This is a great way to handle that. Everybody likes this recipe - and you don't feel disgusting and fat afterwards from useless carby stuffing. If you are on Induction or really watching the carbs, cut back the onion to a tablespoon or two and add onion powder. You don't have to use 80% lean hamburger for the recipe, by the way. (If you use regular ground beef cut back on the coconut oil by about half.)

Dad's Fantastic Pork Stuffing
Dad's Fantastic Pork Stuffing

This is not a light dish by any means, but it is delicious for a holiday treat. Dad makes this stuffing for Christmas and Thanksgiving every year. It can also be baked in a pan in the oven but it is much better when stuffed in a turkey.

Raccoon - Down Home Dinner in a Crock Pot
Raccoon - Down Home Dinner in a Crock Pot

Seriously, I may not be Granny on the Beverly Hill Billies, but I am a country girl who knows how to cook and loves to eat wild game.

And raccoon is no exception. Cooked slowly in a Crock Pot, this makes a very good meal.

Secret: Cut gamey taste by using Whole Cloves.

Homemade Baked Ziti with Ground Beef & Sausage
Homemade Baked Ziti with Ground Beef & Sausage

This is *not* low sodium--next time, I'll leave the sausages out altogether, and either find canned tomatoes in a more reasonable range, or use fresh--but it is about as low-carb and low-fat as I know how to make it. (I usually only have it on holidays.)

Deer, Elk & Moose Steaks - Traditional Native American Dish
Deer, Elk & Moose Steaks - Traditional Native American Dish

Wild meats tend to have a "gamey" flavor. You can reduce that taste by skimming away all excess fat.

You can grill or pan fry your streaks.

Cracklin' Cornbread- Down Home Recipe
Cracklin' Cornbread- Down Home Recipe

Cracklin' Cornbread is one of my family's Thanksgiving tradition.

Cracklings are pork skin that is fried until the fat is rendered off leaving tiny crispy pieces of skin.

You can substitute it with fried bacon. But beware! High Calories!
