One of my favourite curries, chock full of vegetables. This can be frozen, but omit the potatoes. Add pre-boiled, diced potatoes during reheating. This is adapted from the Joy of Vegan Baking cookbook by Colleen Patrick-Goudreau. They are far tastier (and incidentally healthier) than any conventional counterpart.
