One of the best things I have ever made! Recipe adapted from Martha Stewart Living Oct 2009 Roasted Pumpkin Soup recipe. I used less of some ingredients and made smaller portions. I used broth rather than stock. Makes 8 one-cup servings.
I came up with this soup because I really missed the creamy canned comfort soups but wanted a healthier option. This soup really hits the spot for me more than the others ever did! It makes two generous portions and could easily be turned into a complete meal by adding some cooked diced chicken as well.
A nice campliment to any greens but especially good on a salad of baby spinach, toasted pecan halves and crumbled feta cheese.
This recipe has no salt or seasonings so that you can add your own (salt, basil, thyme, oregano, marjoram, etc) for your preferences. My husband adds hot sauce to his bowl!
It also contains a special spice called borsh to give it a tart taste. You can use lemon or vinegar instead. Start with a tbsp and taste.
This is a delicious and filling salad I threw together from leftovers that I liked soooo much I needed to remember it.
