Good for salads. Makes about 4 tablespoons. Just enough for a family size salad unless you like yours really wet. Then just make a double batch. Also, I like my dressings a bit sour but you could add more oil if you want.
Finally a low fat (& reduced carb) chinese stir fry the whole family can enjoy.
Delicious and large in portion for only 300 calories!

A little different than the soup from the "cabbage soup diet". I tend to like this one much better! Fills you up with virtually no calories (you expend them cutting the cabbage!)
Recipe from Daily Garnish (Emily Malone) calls for green French kentils. I couldn't find them and had to subsitute red lentils instead. I have added cooking directions for both the green and red lentils
This is my everyday salad that I make to share with my husband to get our fiber in as well as stay on Keto. I will add a low sugar dressing or lemon juice to add some flavor.
This is a hearty soup. You can add other vegetables i.e. clean out the fridge to add to the nutrition. It also freezes well!
Start with Chicken stock
(I make from boiling the "carcass" of a Rotisserie Chicken. Strain stock, throw out bones)
In Stock Pot:
Add Chicken Stock
1 pound frozen corn
1 can Black Beans or cooked from dry
(strain and rinse all the gassy stuff off)
1 can Black Olives, drained, and chopped
1 can Rotel, pureed in blender if you don't like chunks
1 can tomato sauce, or crushed tomatoes
Chopped up cooked chicken (I use Rotisserie chicken)
Season with Pepper, Cumin, Onion Powder, Garlic or Garlic powder, Chicken Base or Bouillon. WHATEVER you like!
Simmer for several hours, or longer, in a stock pot or in a crock-pot.
After done, smash tortilla chips up and place in bowl, ladle soup on top, top with shredded cheese of choice. I used "Colby-Jack"
Oh, so good!
