This salsa/salad/dip is a unique blend of ingredients that defy categorization. Not Mexican, not Greek, but an outstanding combination. I served this for the first time at a party and it was an immediate hit and gone in minutes!

Hubby's specialty ... so yummy it gets requested whenever we have a fancy dinner. But so simple.
Low fat and tasty! Spice however you want... as for me, I use lots of garlic and pepper.
Adapted from 101cookbooks.com Great, simple, fast recipe. You can toss the tomatoes with somewhere between a teaspoon + of adobo sauce (from can of chipotles) or smoked paprika....more or less depending on how spicy you like your food.
Makes 12 servings (of about 1 tbsp of peanut sauce each)
Brown gb , onion and garlic in olive oil, add all other ingreedients and simmer for 1 hour. Serve with sour cream.
Wonderful for all those extra veggies that start popping up in July and August.

I use low fat broth, but you can use low sodium broth if you are watching that, or you could substitute vegetable broth to make it vegetarian!
