I found this in a Disney Cookbook years ago when my kids were younger and its been a family favorite since. You can adjust it by making it with ground chicken or turkey. You may even wish to use brown sugar Splenda.
My taco/burrito mix. Top with ff sour cream, tomatoes, spinach, onion and salsa as desired.

I took the brown rice meatloaf recipe, and redid it with olives & capers & cilantro for a Spanish flavor. :) Reminds me of my grandma's cooking.

This is a super-delicious lower carb lasagna, made with zucchini that is first oven roasted with parmesan & seasonings to give it more texture and flavor, then loaded up with a flavorful meat sauce, some healthy greens, and a variety of cheeses. YUM!

Alot of the sodium in this came from the canned tomatoes, I'm sure if you use fresh it will help with that.
It would also be good to us lean ground beef. I couldn't afford it at the time.
