I adapted this recipe which was originally submitted to Food.com. This is absolutely delicious!!!
The original recipe says to do this over a grill, which I think would be fantastic. However, apartment living doesn't always allow that. I throw it in the oven for a while until the outsides have turned dark and the inside is a perfect medium.
This dish is not healthy but again is a regular meal at our house so this is for my own tracking purposes
I tried to lower the calories in this a little bit. Unfortunatly they are still quite high. However, I made this for the family and ate some.
This is something I threw together to provide my family with a healthy, hearty meal that's easy to serve and easy to clean up.
I am not sure why this dish was named after the Duke, but it is a delicious recipe. Maybe it was inspired by him.
A wonderful slow cooked bean and ham recipe... the ham falls apart with a spoon. Great served with sour cream and corn bread.
This recipe was adapted from a similar "myrecipes.com" recipe that used pork tenderloin instead of ribeye roast. I used home-made, low sugar blackberry jam instead of store bought preserves. I'm sure it tastes great with pork tenderloin but my store was out, so I bought a 3 pound pork ribeye roast and cut it in half for this recipe.
