Dice bread and place in bottom of each oiled/ greases muffin tin. Chop pepper, tomatoes & olives and divide evenly between muffin tin. Thaw spinach and squeeze out excess liquid and divide among the muffin cups. Divide feta evenly between muffin cups. Wisk eggs and pour over the ingredients in the muffin tin. Bake at 350 for 15-20 min, or until egg mixture is set.
