I was watching an American TV show recently and missed a lot of the plot, as I was distracted by the amount of waffle-eating going on. I tried to prevent myself getting a waffle iron; I’d made that mistake once before. Reader, I didn’t succeed. But I vowed that this time I wouldn’t use it once then consign it to a cupboard under the stairs, and I’ve been as good as my word and have turned into something of a weekend waffler.

Let's not mess around: you want trashy, I'll give you trashy - I'll give you the King. This recipe, for want of a better word, comes from a rhinestone gem of a cookbook, Are You Hungry Tonight?, a collection of his favourite foodstuffs bought on a visit to Graceland many years back, prized ever since and a delight from cover to cover. Even my most recent addition to a library already bursting with bad-taste titles, Liberace Cooks!, can't lose him his crown.
Believe it or not, the quantities below appear in edited, attenuated form. I honour the King but I can't be him.

Surnoli is a Kokani dish from Goa eaten for breakfast or as a tiffin or even for dinner. Yellow in colour, they have a puffy texture with holes due to fermentation, and are eaten with home made butter. They can be sweet (as here) or made without jaggery for a savoury pikelet. When sweet, surnoli have a porous and soft texture due to the jaggery, and they taste very good.
This dish uses poha, an Indian rolled rice. It is easily obtainable from your Indian shop. There are several different thicknesses of poha – Nylon (very thin and crisp), Paper, Thin, Medium, Thick and Dagdi (thick and chewy). There are also poha types made from red rice and brown rice. For this dish, use a white, medium or thick poha for better results.
A very delicate, soft textured dish made as a fasting food. As children we never fasted but if mum said, I 've made khichadi... we all happily fasted that day to eat it this for breakfast and lunch.
Come winter, you start getting petit peas and this is when the street shops in Benaras start selling this traditional yummy dish. Its perfect hole some breakfast for a cold winter morning and goes well thereafter with a cup of hot tea/ coffee. The flavours of garam masala and coriander are well infused in this recipe. Make this and gorge into it :)

When I first encountered bircher muesli on the bountiful breakfast table at Ireland’s Ballymaloe House I assumed they’d invented it, so perfect was the combination of Irish oatmeal, homegrown apples and thick yellow cream. In fact, as I quickly discovered when I tried to recreate this mushy beige manna at home, bircher muesli’s origins lie a long way from the green fields of County Cork.
It is the creation of Maximilian Bircher-Benner, a Swiss doctor and nutritionist, who developed it for patients at his Zurich sanatorium at the turn of the last century as a way of shoehorning yet more raw fruit into their diets. His charges started every single meal with a bowl of his “little mush” – which may, I concede, have been rather too much of a good thing.
Bircher-Benner believed apples had cured him of jaundice as a young man, leaving him unfashionably evangelical, for his time, on the powers of fruit and vegetables. I can see his creation would be excellent fuel for a day yomping in the Swiss countryside (or indeed soaking up the sun in one’s underwear, as seems to have been popular in such establishments). It is also a sound choice for anyone, yomper or not, hoping to see off the mid-morning munchies. Fresher and fruitier than the more familiar dry variety, bircher muesli is the perfect way to start the day, especially now, at the height of the apple season.
