I've been studying all day and wanted to make a quick mid afternoon snack for myself. I was watching the season finale of master chef last night and my mouth was drooling from the crepe the guy made last night. I figured i had the simple ingredients and put this together. This is a pick me upper, and after eating the last bite off my plate, the words that came to mind was : that was divine! I hope you all enjoy it.

This is very close to what my mother used to make. I stuff it into roated bell peppers or acorn squash and serve with a salad.
I love this for breakfast, lunch or dinner. I usually serve the onelete on toasted english muffin.
Also add 4 tablespoons of Stevia Extract (powdered) to the dry ingredients.
I use SweetLeaf brand. It is combination of Inulin Fiber and Stevia (leaf) extract.

Missing Pancakes with a lowcarb diet? These are wonderful! They can be used as bread (make less sweet) or melt butter w/a small amount of cinnamon to use as the syrup on top. I copied this recipe from another website and lowered the sugar. Original recipe calls for 2 Tablespoons of Splenda.
