My kids love this recipe and ask for it every Saturday. You can use any kind of spiced meat. I use beef sausages, removed from the casings and browned before adding the the rest of the mixture.
This was first made by my mother-in-law who has some great healthy recipes! In her recipe she has a 1/4 cup of vegetable oil and two cups of pancake mix. I decided to try the applesauce and one cup of whole wheat flour and it tastes great! I like to make strawberry sauce from frozen strawberries and slice up a banana for topping.
This is my mom's recipe only I put one cup of whole wheat flour instead of 2 cups of white flour. I also added the tsp of vanilla just for flavor.
This recipe is intended to use leftover smoked or barbecued chicken thighs but any leftover chicken will do. However, the smoked chicken is really what gives this soup it's remarkable flavor so if you're using another type of leftover chicken you may want to add a cap-full of liquid smoke.
